Chickpea Skillet with Mushrooms and Spinach
🥕 Ingredients :
200g cooked chickpeas
100g mushrooms
150g fresh spinach
1 onion
1 garlic
200ml crushed natural tomato
Salt and black pepper to taste
Extra Virgin Olive Oil (EVOO)
👩🍳 Preparation:
Cut the onion finely and mince some garlic. Slice the mushrooms.
In a frying pan greased with EVOO, put the chopped garlic over medium heat and brown it (without burning it).
Add the onion and let it soften (10 mins).
Add the sliced mushrooms, fresh spinach, salt and ground pepper. Cook 5 more minutes.
Add the crushed tomato and cooked chickpeas. Cook everything for 5 minutes.
Zucchini and tuna bites
👩🍳 Preparation:
Grate a zucchini and drain well to remove all the excess water, with the help of a cloth (this step is important).
In a bowl, mix the grated and drained zucchini along with the tuna, egg, mozzarella, oat flour and spices. Mix everything well.
Shape by hand and place in the air fryer (or oven), on parchment paper. Spray a little Extra Virgin Olive Oil on top.
Bake for 5 minutes at 200ºC on each side (move the balls), or 15 minutes at 200ºC in the oven.
Serve and enjoy with your favorite sauce.

1 egg
30 g grated mozzarella cheese (lactose-free)
1 tbsp oat flour (gluten-free)
dried spices to taste
Salt and black pepper to taste

Whole wheat bread toast with tomato, EVOO, and fresh cheese, ham or turkey.
